Nyungne Traditional Rice Soup

There are a few recipes for the rice gruel that we take at the end of a Nyungne retreat.

This recipe is from Lama Tashi Phuri, who served as a shabchi for His Holiness Penor Rinpoche much of his life.

Serves 1

1 cup rice (the type of rice is your choice)
3 to 4 cups water
Dash of salt (optional)
1/4 cup whole milk (almond, coconut, or oat milk okay if you prefer, but look for those that are unsweetened yet higher in calories)
1 tablespoon butter (other oils such as coconut oil okay if you prefer, but butter will make you feel strong after fasting)
Dash of Tsampa (optional)

Prepare rice for the gruel by washing it until the water is clear.
Put the rice and water in a heavy pan on a LOW flame.
Boil the water over LOW flame for one to two hours. The goal is for it to gain a thick consistency, but not too thick.
When it is boiled to the consistency you prefer, add the butter, stirring until it melts, then add the butter and salt.

It is best if you can prepare this in advance unless you have someone willing to prepare it for you the day of. They will need to awaken and prepare it half an hour at least prior to your starting practice so it is ready in time. This sounds like a very simple dish, but after the fast people find it extremely tasty!
